What I meant by the second part is getting a program called VirtualDub, install a script engine called Avisynth (google to find both of those, they're very straightforward to install) and then you can use user-made filters to process the video after you've captured it.

So if I record with composite jacks, it will be interlaced and I need to deinterlace with Virtualdub?
